These cookies are a total hit and people always think they took me hours to bake. But the truth is, they take about five minutes to prep and 10 minutes to bake! They're light like a cake but bite-sized like a cookie. My whole family is obsessed, and I have been making them for years now!
INGREDIENTS:
One box lemon cake mix
Two large eggs
One 8-ounce container of Cool Whip
Powdered sugar (for rolling the cookies in)
INSTRUCTIONS:
1. Preheat the oven to 350 degrees.
2. Mix cake mix, cool whip and eggs until dough forms. Dough will be very thick (Also cold. You're putting an entire container of frozen dairy product into the mix, duh.).
3. Scoop teaspoons of dough into a bowl of powdered sugar. Coat each teaspoon entirely.
4. Place each sugar-covered teaspoon of dough on a greased cookie sheet, about one inch apart.
5. Bake 8-12 minutes. (FYI: I have an old oven and mine takes exactly 9 minutes for perfect cookies.)
